Since starting Slimming World properly last week, I've tried to cook new things which I wouldn't have tried previously. One recipe I discovered, and altered a little, is for pancakes. Who doesn't love pancakes on a Sunday morning? This recipe isn't actually syn free once you count the maple syrup but we'll say for ease that minus that, it's a brilliant Slimming World breakfast.
For this recipe you'll need the following:
- 35 grams rolled oats (I just bought normal oats from Asda and used this as my Healthy Extra B for the day)
- 2 tbsp Muller Light Yogurt (I used banana and custard, although some recipes call for vanilla but when I tried it wasn't as tasty)
- 2 beaten eggs
- 1tsp sweetener
- 1tsp baking powder (count this as 0.5 syns)
- 1tsp vanilla essence
It's as easy as pouring everything into a bowl, giving it a good mix around and then using a hand blender to make the consistency into like thick milk. I blended for around 3 minutes to make sure all the oats had been crushed.
Pour a big spoonful of mixture into a pan which has been sprayed with Frylight and cook until air bubbles start to appear on the upside, then flip and cook for two more minutes until golden brown. You can add bananas, strawberries, lemon juice or even bacon and maple syrup like I did. On Slimming World the bacon is free to eat so I just had to count 2 syns for the 1tsp of syrup I drizzled over.
An easy-peasy, utterly tasty weekend breakfast.
