If I had to pick one dish which I couldn't live without, it would have to be chicken. Chicken kiev's to be exact. Anyone that knows me, knows that I can't get enough of the buttery garlic centre. Sometimes I even talk about kiev's as a conversation starter. As you can imagine, it's quite the dinner party topic #sarcasm. But even though I smell of garlic five days out of six, I didn't want to cut them out of my life just because I've joined Slimming World.
So I created my own version. A healthier, but equally as tasty, version.
The ingredients you'll need for this are as follows:
- Skinless Chicken Breast
- Crushed Garlic Clove
- Pinch of Dried Parsley
- 1 Tablespoon of Garlic & Herb Light Philadelphia
- 1 Egg
- 1 Slice of Bread (Crusts removed) - I have 2 pictured here but I didn't use most of it
- Sweet Potato
- Fry Light Spray
- Corn on the Cob (of which ever vegetables you'd like to eat)
First use a rolling pin (maybe not your fist like I did because I don't have a rolling pin yet) to flatten the chicken breast out slightly, and then slice it down to the middle to open it up. Mix your crushed garlic and parsley and rub along one side. Then take a tablespoon of Garlic & Herb Philadelphia and spread along the other side. Close back up.
Take your egg and beat it in a bowl - this will be used to coat the chicken before the breadcrumbs. To make your breadcrumbs take a blender (I just bought a handheld one from Asda for £11) and pop in your bread. Use a bigger bowl than I have, as I managed to get crumbs everywhere.
Dip the chicken carefully in the egg and then straight into your bowl of bread crumbs. Make sure the breast is fully coated and lay on a baking tray to go into a pre-heated oven, gas mark 6, or if you've got a fan over probably around 180 degrees for 30 minutes.
To accompany the chicken kiev, I wanted something that was filling but still healthy so I chopped up a sweet potato into wedges. Then on a baking tray lay them out and spray Fry Light over, along with some salt and pepper for added flavour. You can also add some Cajun spices if you'd like, or perhaps some paprika. These need to go in for 20 minutes and while that's cooking, pop on your vegetables. In my case it was a corn of the cob - minus the butter - and some broccoli and carrots.
And there you have it, a super easy, super healthy Chicken Kiev. Let me know if you give this a whirl or in fact, if you'd like to see more posts like this.
